Antinori – Cervaro della Sala 2023 is the iconic white wine of Castello della Sala in Umbria – a benchmark for Italian whites that combines depth, poise, and remarkable longevity. It is built on Chardonnay, complemented by Grechetto, blending Burgundian texture with Umbrian energy and the minerality of the estate’s high-altitude vineyards.

The grapes are harvested parcel by parcel to preserve freshness and precision. Chardonnay undergoes fermentation in small French barriques, where it rests on the lees with gentle bâtonnage for several months. Grechetto is vinified in stainless steel to retain its aromatic clarity and crisp acidity. Before bottling, the two components are blended and the wine undergoes additional bottle aging, bringing together all elements into a seamless whole.

The 2023 vintage shows purity and focus. The bouquet opens with cool citrus and green apple, evolving into white flowers, pear, and stone fruit. With air, deeper layers appear: toasted almond, delicate vanilla, butter blossom, and subtle hints of flint and smoke. On the palate, the wine is structured and refined: creamy texture from lees contact, vibrant acidity, and a salty mineral backbone that carries the wine into a long, precise finish. Grechetto contributes backbone and tension, while Chardonnay provides richness, layers, and a silky mouthfeel.

Cervaro della Sala 2023 can be enjoyed now for its freshness and aromatic range, but it also has the strength to age for 20 years or more. Over time it will reveal tertiary nuances of beeswax, hazelnut, honey, and smoky minerality, while maintaining its linear elegance. Serve at 10–12 °C in generous white wine glasses.

Food pairings: oysters and shellfish, grilled fish with lemon and herbs, chicken or veal in delicate sauces, mushroom or truffle risotto, and aged hard cheeses. It elevates Mediterranean cuisine beautifully, yet also shines on its own as a contemplative white wine.
